The olives are harvested early in October and milled immediately. Thanks to a cold extraction process below 22 ºC, their aromas, vitamins, antioxidants, and natural fatty acids are preserved intact, resulting in a top-quality first-press oil.

It features an intense green olive fruitiness, with fresh aromas reminiscent of green apple, freshly cut grass, and banana. On the palate, it stands out for its sweet entry, with virtually no bitterness, a slight spiciness, and an elegant almond aftertaste that provides balance and smoothness.
